They’re considered drupes or drupe because their flesh surrounds a shell that houses a seed.

Peaches are important to human health as an important source of phenolic compounds, cyanogenic glucosides, and phytoestrogens.  Peach is a fleshy fruit with a single seed surrounded by a fleshy pulp called pericarp. The pericarp has three layers. The endocarp which is adjacent to the seed undergoes a hardening process as the fruit matures. The middle mesocarp remains as the soft edible region of the fruit.  The exocarp or skin is the non-edible portion and protects the fruit. The flavor of peaches is due to sugars and organic acids and lactones give the typical peach aroma. Depending on the aroma and flavor three different types of peaches are found: Honey peach, nectarine peach, and flat peach.
